Sunday Pot Roast in the Bean Pot

Do you and your family like comfort food? Here is a fresh take on a slow-cooked Pot Roast all in one meal that makes clean-up a breeze.

Comfort food is  prepared traditionally, that may have a nostalgic or sentimental appeal, or simply provide an easy-to-eat, easy-to-digest meal rich in calories, nutrient, or both. Comfort foods may be foods that have a nostalgic element either to an individual or a specific culture. Many comfort foods are flavorful and easily eaten, having soft consistencies.

Many Sunday mornings my mother would have a roast in the oven ready to turn on and let cook while we were in church.  When we returned home the house would smell so good and we would be so very hungry.   Along with hot rolls a salad and our glass of tea our meal would be complete. My mother always set a beautiful table with table cloth, napkins and pretty dishes.  If only she would have had a Bean Pot.

Sunday Pot Roast 
 
  • 1 tablespoon cornstarch
  • 8 medium carrots, cut into thirds
  • 2 medium onions, each cut into 8 wedges                                                
  • Coarse salt and ground pepper
  • 5 medium potatoes, peeled
  • 2 stalks of celery cut 
  • 1 beef chuck roast (3 pounds), trimmed of excess fat
  • 2 tablespoons Worcestershire sauce
    Directions
  • In your Bean Pot , stir together cornstarch and 1 1/2 cups of  cold water until smooth. Add carrots, potatoes, celery and onions; season with salt and pepper, and toss.
  • Sprinkle roast with 1 teaspoon salt and 1/2 teaspoon pepper; place on top of vegetables, and drizzle with Worcestershire. Cover with lid and place in oven at 300 degrees for 3-4 hours or until meat and vegetables are tender.   Do not preheat oven.
  • Transfer roast to a cutting board; thinly slice against the grain. Place vegetables in a serving dish; pour pan juices through a fine-mesh sieve, if desired. Serve roast with vegetables and pan juices.

  •  TIP:  Savor the flavor ----- Set an atmosphere that will enhance your enjoyment of your meal by turning off any distractions.  All cell phones off....all televisions off.....etc.  If dinner time is stressful, it will affect your digestion process and prevent you from enjoying the flavor of the food and those you love around the table.
